Healthy Food Swap: Zoodles

After an almost-spring-weekend, it's nice to have a few go-to dinner solutions that are healthy, fun and filling. A few weeks ago we shared our favorite 'rice hack' and this week we are sharing our favorite noodle hack!

Meet 'zoodles', better known as zucchini noodles. This low-carb alternative veggie will have your kids splurging up pasta night without any suspicion of a veggie fake out.

Not only are they fun and easy to make, but they are also quick to cook and cheap. First, you'll need to purchase a spiralizer, but don't worry they're usually around $10! Next, you'll need about 4-5 zucchini squash to feed a family of four. Finally, you'll need whatever sauce and toppings you want. (We will share a few of our favorite combos below)

To Cook: 

1. Wash your zucchini and remove one end with a knife.
2. Use your spiralizer to create zoodles, invite your children in to help with this step. It's fun watching the zoodles being created! 
3. In a skillet, sauté your zoodles with some olive oil and garlic for about 5 minutes. 
4. Add in your sauce, cooked meat, veggies, etc. 
5. Enjoy!


Zoodles are a great substitute for spaghetti, but you can mix it up! Try it Mexican style with enchilada sauce, black beans and corn or serve them cold as an untraditional take on pasta salad. The possibilities are endless!
